    1 lb cooked lobster meat, chopped

    1 lb sea scallops, halved if large

    2 garlic cloves, minced

    2 medium Yukon Gold potatoes, peeled and diced

    4 cups seafood stock or low-sodium fish broth

    1 cup heavy cream

    1 cup whole milk

    1 cup corn kernels (fresh or frozen)

    1 teaspoon fresh thyme or 1 tablespoon fresh parsley, chopped (optional)

    Salt, to taste

    Freshly ground black pepper, to taste

    How to Make Creamy Lobster and Scallop Chowder
    In a large pot or Dutch oven, heat butter and olive oil over medium heat.

    Add onion and garlic, sautéing until soft and fragrant.

    Stir in diced potatoes and seafood stock. Bring to a gentle boil, then simmer for 12–15 minutes until potatoes are tender.

    Add scallops and cook for 3–4 minutes, just until opaque.

    Gently stir in lobster meat, corn, heavy cream, and milk. Simmer on low heat for 5–7 minutes—do not boil.
