Creamy Garlic Sauce Baby Potatoes

 

Make these creamy garlic baby potatoes in under 40 minutes! Golden roasted baby potatoes tossed in a rich Parmesan garlic sauce perfect as an easy side dish for dinner.

Ingredients:

2 lbs (900 g) baby potatoes, halved
2 tablespoons olive oil
Salt & black pepper, to taste
3 tablespoons unsalted butter
5 cloves garlic, minced
1 cup (240 ml) heavy cream
½ cup (50 g) grated Parmesan cheese
1 teaspoon Italian seasoning (or dried thyme/oregano mix)
2 tablespoons fresh parsley, chopped

Instructions:

Preheat oven to 400°F (200°C).

Roast potatoes: Toss halved baby potatoes with olive oil, salt, and black pepper. Spread on a baking sheet in a single layer and roast for 25–30 minutes until golden brown and tender.

Make garlic cream sauce: In a medium saucepan, melt butter over medium heat. Add minced garlic and sauté 1–2 minutes until fragrant.

Add cream and cheese: Stir in heavy cream, grated Parmesan, and Italian seasoning. Simmer gently for 3–4 minutes until the sauce thickens.

Combine potatoes and sauce: Remove roasted potatoes from the oven and transfer to a serving dish. Pour the creamy garlic sauce over the potatoes and toss gently to coat evenly.

Garnish and serve: Sprinkle with fresh parsley and serve warm as a delicious side dish.
