Creamy Garlic Parmesan Beef Pappardelle Pasta

Ingredients:
1 lb. pappardelle pasta
1 tbsp olive oil
1.5 lbs beef sirloin (cut into 1-inch cubes)
1 large onion (chopped)
3 cloves garlic (minced)
1 (28 oz) can crushed tomatoes
1 cup beef broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
2 tbsp chopped fresh parsley
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
Directions:
1. Cook the Pasta:
Cook pappardelle according to package instructions. Reserve 1 cup of pasta water before draining.
2. Brown the Beef:
Heat olive oil in a large skillet over medium-high heat.
Add beef cubes and cook until browned on all sides. Remove from skillet and set aside.
3. Sauté the Aromatics:
In the same skillet, cook chopped onion until softened (about 5 minutes).
Add minced garlic and cook for 1 minute until fragrant.
4. Build the Sauce:
Stir in crushed tomatoes, beef broth, oregano, salt, and pepper.
Bring to a simmer and cook for 10 minutes, stirring occasionally.
5. Make it Creamy:
Return beef to the skillet.
Lower the heat and stir in heavy cream. Simmer for 5 minutes until thickened.
6. Toss the Pasta:
Add cooked pappardelle to the sauce and toss to coat.
If the sauce is too thick, add reserved pasta water (a little at a time) until desired consistency is reached.
7. Finish and Serve:
Stir in Parmesan cheese and fresh parsley.
Serve immediately with extra Parmesan on top!
