Ingredients:

2 boneless, skinless chicken breasts

Salt and freshly ground black pepper (to taste)

2 tablespoons olive oil

2 tablespoons unsalted butter

2 cups fresh mushrooms, sliced

4 garlic cloves, minced

1 cup low-sodium chicken broth

1/4 cup heavy cream

1 teaspoon dried thyme

3 cups baby spinach

Cooked pasta or rice (optional, for serving)

Instructions:

1. Season the chicken breasts with salt and black pepper.

2. In a large skillet, heat olive oil over medium heat. Add chicken and sear for 5-6 minutes per side until golden and cooked through. Remove from skillet and set aside.

3. In the same skillet, melt the butter. Add mushrooms and sauté for about 4-5 minutes until browned.

4. Stir in minced garlic and cook for 1 minute until fragrant.

5. Pour in chicken broth, heavy cream, and thyme. Stir and simmer for 5 minutes until the sauce slightly thickens.

6. Add spinach and cook until wilted.

7. Return chicken to the skillet. Spoon sauce over chicken and simmer for another 2 minutes.

 

8. Serve hot over cooked pasta or rice for a comforting and satisfying meal.
