    Creamy Garlic Chicken with Mushrooms

Looking for a quick and comforting chicken dinner? This Creamy Garlic Chicken with Mushrooms is a rich and flavorful one-pan meal that’s perfect for busy weeknights. Juicy chicken breasts are simmered in a luscious garlic cream sauce with tender mushrooms and herbs. Serve it over pasta, rice, or mashed potatoes for the ultimate cozy dinner.

    Ingredients:

    4 boneless, skinless chicken breasts

    1 tbsp olive oil

    1 medium onion, thinly sliced

    2 cloves garlic, minced

8 oz fresh mushrooms, sliced (white or cremini)

    1 cup heavy cream

    1/2 cup chicken broth

1 tsp dried thyme (or Italian seasoning)

Salt and black pepper, to taste

    Fresh parsley, chopped (for garnish)

    Instructions:

    1. Sear the Chicken:
Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper. Cook for 6–8 minutes per side until golden and fully cooked. Transfer to a plate and set aside.

    2. Sauté the Aromatics:
In the same skillet, add sliced onions and minced garlic. Cook for 2–3 minutes until fragrant and soft.

    3. Cook the Mushrooms:
Add the sliced mushrooms and sauté for 4–5 minutes until lightly browned and tender.

    4. Make the Creamy Sauce:
Pour in the chicken broth and gently scrape the bottom of the pan to deglaze. Add heavy cream and dried thyme, stirring to combine.

    5. Simmer & Finish:
Return the cooked chicken to the skillet. Let everything simmer for 5–7 minutes, allowing the sauce to thicken and flavors to blend.

    6. Garnish & Serve:
Sprinkle with freshly chopped parsley. Serve warm over pasta, rice, or creamy mashed potatoes for a satisfying family dinner.
