    Creamy Crockpot Chicken & Corn Chowder

    Get cozy with a bowl of this hearty slow cooker chicken chowder a creamy, comforting soup that’s packed with tender chicken, sweet corn, potatoes, and flavorful seasonings. It’s the perfect comfort food dinner for fall and winter nights, and the crockpot does all the work!

     

    Ingredients:

    1 ½ lbs boneless, skinless chicken breasts (or thighs)

    4 cups chicken broth

    1 cup heavy cream (or half-and-half for lighter version)

    2 cups sweet corn (fresh, frozen, or canned)

    3 medium potatoes, peeled & diced

    1 medium onion, chopped

    2 celery stalks, diced

    2 carrots, diced

    3 cloves garlic, minced

    2 tbsp butter

    1 tsp dried thyme

    ½ tsp smoked paprika

    Salt & pepper, to taste

    2 tbsp cornstarch + 2 tbsp water (optional, for thickening)

    Fresh parsley or chives, chopped (for garnish)

     

    Instructions:

    1. Place chicken breasts, potatoes, onion, celery, carrots, garlic, and corn into the slow cooker.

    2. Pour in chicken broth, sprinkle in thyme, paprika, salt, and pepper. Stir gently.

    3. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender.

    4. Remove chicken, shred with two forks, and return to the crockpot.

    5. Stir in butter and heavy cream. For a thicker chowder, mix cornstarch + water and add to the soup, cooking for another 15 minutes.

    6. Ladle into bowls, garnish with parsley or chives, and enjoy your creamy, cozy chowder!

     

    Tips & Variations:

    Spicy Kick: Add diced jalapeños or red pepper flakes

    Cheesy Twist: Stir in 1 cup shredded cheddar for a cheesy chicken corn chowder

    Lighter Version: Use milk instead of cream & skip the butter for fewer calories.
