    Creamy Cowboy Butter Tortellini with Steak, Carrots & Bell Peppers

    Creamy Cowboy Butter Tortellini with Steak, Carrots & Bell Peppers

    A rich, flavor-packed dinner that combines juicy steak, cheesy tortellini, and colorful vegetables in a silky cowboy butter cream sauce!

     

    Ingredients:

    20 oz cheese tortellini (fresh or refrigerated)
    1 lb sirloin or ribeye steak, cut into bite-sized cubes
    Salt, black pepper, garlic powder, smoked paprika
    2 tbsp olive oil
    4 tbsp butter
    4 cloves garlic, minced
    1 cup heavy cream
    ½ cup beef broth
    1 cup sliced carrots (lightly steamed or roasted)
    1 cup sliced bell peppers (red, yellow, or orange)
    ¾ cup shredded Parmesan cheese
    Optional: chopped parsley, red pepper flakes

    Instructions:

    Boil cheese tortellini according to package instructions until al dente. Drain and set aside.

    Season steak cubes with salt, black pepper, garlic powder, and smoked paprika.
    Heat olive oil in a large skillet over medium-high heat, then sear steak for 3–5 minutes until browned and cooked to your liking. Remove and set aside.

    Steam or roast the carrots until tender.
    In the same skillet, sauté the bell peppers for 3–4 minutes until softened and slightly caramelized.

    Melt butter in the skillet, add minced garlic, and cook for 1 minute until fragrant.
    Pour in heavy cream and beef broth; let simmer for 3–4 minutes until thickened.
    Stir in Parmesan cheese until smooth and creamy.

    Return steak, carrots, bell peppers, and tortellini to the skillet. Toss gently to coat everything in the rich cowboy butter sauce.
    Garnish with parsley and a sprinkle of red pepper flakes if desired.
