Creamy Coconut Lime Chicken Soup

Ingredients (Serves 4):
For the Soup:
2 chicken breasts (or thighs), cut into bite-sized pieces
1 can (400 ml / 14 oz) coconut milk
3 cups chicken broth
3 garlic cloves, minced
1 small onion, finely chopped
1–2 stalks lemongrass, bruised and cut into 2-inch pieces
1-inch piece fresh ginger, sliced
1–2 red chili peppers, sliced (optional for heat)
Zest and juice of 1 lime
1–2 tbsp vegetable oil
1 medium carrot, thinly sliced
Fresh cilantro or Thai basil for garnish
Salt & black pepper, to taste
Instructions:
Heat oil in a large pot over medium heat. Sauté onion, garlic, ginger, and lemongrass for 2–3 minutes until fragrant.
Add chicken pieces and cook 3–4 minutes until lightly browned on all sides. Season with salt and pepper.
Pour in chicken broth and coconut milk. Add sliced carrot and chili peppers (if using). Bring to a gentle boil, reduce heat, and simmer for 15–20 minutes until chicken is fully cooked and flavors come together.
Stir in lime zest and lime juice. Taste and adjust seasoning with more salt, pepper, or lime juice if desired. Remove lemongrass stalks.
Ladle soup into bowls and garnish with fresh cilantro or Thai basil. Serve with rice noodles or jasmine rice for a complete meal.
