Creamy Coconut Curry Chicken Recipe (Easy & Flavorful!)

Ingredients:
600 g boneless chicken thighs or breasts, cut into bite-sized pieces
1 tablespoon vegetable oil
1 onion, finely chopped
3 cloves garlic, minced
1 tablespoon ginger, minced
2 tablespoons curry powder (or red curry paste)
1 teaspoon turmeric powder (optional)
1 can (400 ml) coconut milk
1 cup chicken broth
1 large tomato, chopped (or 1/2 cup canned diced tomatoes)
1 tablespoon fish sauce or soy sauce
1 tablespoon brown sugar or palm sugar
Salt & pepper, to taste
Fresh cilantro, for garnish
Instructions:
1. Heat oil in a large skillet over medium heat. Add onion, garlic and ginger. Cook for 5 minutes until soft and fragrant.
2. Stir in curry powder and turmeric powder. Cook 1–2 minutes to release the flavors.
3. Add the chicken pieces and coat them with the spice mixture. Cook for 5–7 minutes until lightly browned.
4. Pour in coconut milk, chicken broth and chopped tomatoes. Stir in fish sauce and sugar, and bring everything to a gentle simmer.
5. Reduce heat and cook uncovered for 20 minutes, stirring occasionally, until the sauce thickens and the chicken is tender.
6. Season with salt and pepper. Garnish with fresh cilantro and serve hot with fluffy rice or naan bread.
