Ingredients:
4 boneless, skinless chicken breasts
2 cups fresh spinach, chopped
1 cup mushrooms, sliced
1 cup cream of mushroom soup
1/2 cup sour cream
1 cup shredded mozzarella cheese
2 cloves garlic, minced
1 tbsp olive oil
1 tsp Italian seasoning
Salt and pepper to taste
Directions:
1. Preheat your oven to 375°F (190°C).
2. In a skillet, heat olive oil over medium heat. Add garlic and cook for 1–2 minutes until fragrant.
3. Add mushrooms and sauté for 5–7 minutes until tender and the liquid evaporates.
4. Stir in spinach and cook for 2–3 minutes until wilted. Remove from heat.
5. In a separate bowl, whisk together cream of mushroom soup, sour cream, Italian seasoning, salt, and pepper.
6. Arrange chicken breasts in a greased baking dish. Layer the spinach-mushroom mixture over the top.
7. Pour the creamy sauce evenly over the chicken, then sprinkle with mozzarella cheese.
8. Bake for 25–30 minutes until the chicken is cooked through (internal temp 165°F) and the top is bubbly and golden.
