Ingredients:
2 lbs boneless, skinless chicken breasts, sliced
2 tbsp olive oil
1 medium carrot, peeled and diced
1 medium onion, chopped
4 cloves garlic, minced
1 tsp Italian seasoning
4 cups chicken broth
1 cup heavy cream
½ cup grated Parmesan cheese
¼ cup shredded mozzarella
½ tsp salt
¼ tsp black pepper
Fresh basil or parsley, chopped (for garnish)
Directions:
Heat olive oil in a large pot over medium heat. Add the chicken slices and cook for 2–3 minutes per side until no longer pink. Season lightly with salt and pepper.
Stir in the carrots, onion, and garlic. Sauté for 2–3 minutes until fragrant and softened.
