1 cup wild rice

1 lb diced chicken breast (boneless, skinless)

2 cups fresh mushrooms, sliced

1 yellow onion, chopped

3 cloves garlic, minced

4 cups chicken broth (low-sodium for a healthier option)

1 cup heavy cream (or half-and-half for a lighter version)

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and black pepper, to taste

 

Instructions (Easy One-Pot Meal):

1. Sauté the Aromatics
Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic; cook for 3-4 minutes until soft and aromatic.
