    1 can (10 oz) red enchilada sauce

    1 can (10 oz) diced tomatoes with green chilies (like Rotel)

    1 can (15 oz) sweet corn, drained

    1 can (15 oz) black beans, rinsed and drained

    1½ cups chicken broth

    1 cup heavy cream

    1 tsp ground cumin

    1 tsp chili powder

    1 tsp smoked paprika

    Salt and black pepper to taste

    1 cup shredded cheddar cheese

    1 cup shredded Monterey Jack cheese

    Fresh chopped cilantro, for garnish

    Tortilla chips, for serving

    How to Make Creamy Chicken Enchilada Soup:

    Step 1: Sauté Onion and Garlic
    Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 3–4 minutes until soft. Add garlic and cook another 30 seconds until fragrant.

    Step 2: Add Base Ingredients
    Pour in the enchilada sauce, diced tomatoes with green chilies, and chicken broth. Stir and bring to a simmer.
