1 lb boneless, skinless chicken breasts or thighs, cubed
1 medium onion, chopped

2 celery stalks, chopped
3 cloves garlic, minced
6 cups chicken broth (homemade or low-sodium)
1 tsp dried thyme
1/2 tsp dried rosemary
Salt and pepper, to taste
1/2 cup heavy cream or milk (optional for extra creaminess)
For the Dumplings:
2 cups all-purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp garlic powder
1/2 cup milk
1/4 cup unsalted butter, melted
1 large egg
1/4 cup chopped parsley (optional, for garnish)
Directions:
Prepare the Soup:
In a large pot over medium heat, cook chicken until no longer pink. Remove and set aside.
In the same pot, sauté onion, carrots, celery, and garlic until softened, about 5 minutes.
Add chicken broth, thyme, rosemary, salt, and pepper. Bring to a simmer and cook 10 minutes.
Make the Dumplings:
In a separate bowl, combine flour, baking powder, salt, and garlic powder.
Stir in milk, melted butter, and egg until a thick dough forms.
Assemble & Cook:
Return chicken to the pot with the soup.
Drop spoonfuls of dumpling batter onto the simmering soup.
