Creamy Chicken and Butternut Squash Bake

Ingredients:
2 tbsp olive oil
1 medium yellow onion, diced
3 garlic cloves, minced
1.5 lbs boneless, skinless chicken thighs, cubed
4 cups butternut squash, peeled and cubed
1 tsp salt
½ tsp black pepper
1 tsp dried thyme
½ tsp smoked paprika
½ tsp ground nutmeg
½ tsp chili flakes (optional)
1 cup heavy cream
½ cup chicken broth
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 tbsp chopped fresh parsley (for garnish)
Instructions:
1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
2. In a large skillet, heat olive oil over medium heat. Sauté diced onion for 2–3 minutes until soft, then add garlic and cook for another 30 seconds.
3. Add cubed chicken and cook until browned, about 5 minutes.
4. Stir in the butternut squash, salt, pepper, thyme, paprika, nutmeg, and optional chili flakes. Cook for 3–4 minutes.
5. Pour in the chicken broth and heavy cream. Let simmer for 5 minutes until slightly thickened.
6. Remove from heat, stir in mozzarella and half the Parmesan.
7. Transfer to prepared baking dish and top with remaining Parmesan cheese.
8. Bake uncovered for 25–30 minutes until the top is golden and the squash is tender.
9. Garnish with fresh parsley and serve warm.
