    The Creamy Beef & Mushroom Rice Bake is a comforting one-pan meal that’s rich, cheesy, and packed with flavor. Made with tender ground beef, hearty mushrooms, and creamy cheddar, it’s the ultimate comfort food for family dinners. This easy casserole recipe comes together quickly and is perfect for busy weeknights. Each bite is a delicious blend of savory beef, tender rice, and melted cheese. Ideal for leftovers, it’s a dish your family will ask for again and again!

    Ingredients:

    1 lb. ground beef (85% lean)

    1 ½ teaspoons Italian seasoning

    Salt and pepper to taste

    3 tablespoons butter, divided

    ¾ cup diced onions

    1 tablespoon minced garlic

    2 ½ cups beef broth

    1 ¼ cups uncooked long-grain white rice (not instant)

    8 oz. fresh button mushrooms, sliced

    1 can (10.5 oz.) cream of mushroom soup

    ½ cup milk

    ½ cup sour cream

    2 cups shredded cheddar cheese, divided

    Instructions:

    Cook the Beef:

    In a large skillet over medium heat, brown the ground beef with Italian seasoning, salt, and pepper. Once cooked, drain excess fat and set aside.

    Sauté Aromatics:

    Using the same skillet, melt 2 tablespoons of butter over medium heat. Add diced onions and sauté until softened (about 3–4 minutes). Stir in minced garlic and cook for another minute for added flavor.

    Toast Rice & Mushrooms:

    Add sliced mushrooms to the skillet and cook for 4–5 minutes until tender. Stir in the uncooked rice, toasting it lightly for 1–2 minutes to enhance its flavor.

    Simmer the Rice:

    Pour in the beef broth and add the cooked ground beef back to the skillet. Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 20 minutes, stirring occasionally, until the rice is tender and absorbs the broth.

    Make It Creamy:

    Preheat your oven to 350°F (175°C). Mix the cream of mushroom soup, milk, sour cream, and 1 cup of shredded cheddar cheese into the skillet. Stir until the mixture is creamy and fully combined.

    Assemble & Bake:

    Transfer the mixture to a greased 9×13-inch baking dish. Spread evenly and top with the remaining shredded cheddar cheese.

    Bake to Perfection:

    Bake uncovered for 20 minutes, or until the cheese melts and turns bubbly. Let the casserole rest for 5 minutes before serving.
