Ingredients:

1.7 lbs boneless, skinless chicken thighs, cut into strips
3 large yellow onions, thinly sliced
1 head of garlic, top trimmed
½ cup sun-dried tomatoes, chopped
1 tbsp balsamic vinegar
Olive oil (for roasting and sautéing)
1 tsp salt
1 tsp paprika
1 tsp dried Italian herb blend
½ tsp garlic powder
½ tsp onion powder
½ cup heavy cream
1 handful fresh parsley, chopped

Set oven to 400°F (200°C) and line a baking sheet with parchment paper.
