Ingredients:
For the Creamy Alfredo Soup Base
1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 can (28 oz) crushed tomatoes
4 cups chicken broth (or vegetable broth)
1 tsp dried basil
1 tsp dried oregano
½ tsp red pepper flakes (optional)
Salt & black pepper to taste
8 oz lasagna noodles, broken into pieces
1 cup heavy cream
For the Ricotta Cheese Mixture
1 cup ricotta cheese
1 cup shredded mozzarella
¼ cup grated Parmesan
½ tsp garlic powder
1 tbsp fresh basil or parsley, chopped
For Garnish

Directions:
Heat olive oil in a large pot. Add chopped onion and sauté until soft. Add garlic and cook briefly until fragrant.
Stir in crushed tomatoes, broth, basil, oregano, pepper flakes, salt, and pepper. Bring to a gentle simmer.
Add broken lasagna noodles and simmer 8–10 minutes, stirring often, until al dente.
Pour in the heavy cream and let the soup simmer 2–3 minutes until beautifully creamy and blended.
In a bowl, combine ricotta, mozzarella, Parmesan, garlic powder, and fresh herbs.
Ladle the hot soup into bowls. Add a big spoonful of the ricotta mixture on top let it melt in or stir for extra creaminess.
