    Creamy Alfredo Lasagna Soup Recipe

    Looking for a cozy and indulgent twist on classic lasagna? This Creamy Alfredo Lasagna Soup combines the hearty flavor of Italian sausage, lasagna noodles, and a homemade Parmesan Alfredo sauce into one irresistible bowl. It’s the ultimate comfort food soup perfect for chilly nights and easy weeknight dinners!

    Ingredients:

    For the Lasagna Soup:

    ½ lb ground Italian sausage

    1 small onion, chopped

    8 oz mushrooms, sliced

    2 garlic cloves, minced

    4 cups fresh baby spinach

    5 cups low-sodium chicken broth

    5 lasagna noodles, broken into pieces

    1 tsp dried oregano

    ½ tsp dried basil

    For the Creamy Alfredo Sauce:

    3 tbsp unsalted butter

    3 tbsp all-purpose flour

    1 cup whole milk

    1 cup grated Parmesan cheese

     

    Instructions:

    1. Brown the Sausage:

    In a large soup pot, cook the ground sausage over medium heat until fully browned. Break it up into crumbles as it cooks.

    2. Add Onion and Mushrooms:

    Stir in chopped onions and sliced mushrooms. Cook for 5–6 minutes, or until onions are translucent and mushrooms are tender.

    3. Add Garlic and Spinach:

    Mix in the minced garlic and baby spinach. Sauté for 2–3 minutes until the garlic is fragrant and the spinach wilts.

    4. Simmer with Broth:

    Pour in the chicken broth and bring everything to a light simmer. Let it cook for about 5 minutes.

    5. Add Pasta and Herbs:

    Add broken lasagna noodles to the pot along with dried oregano and basil. Simmer for 10–12 minutes, or until noodles are al dente.

    6. Make the Alfredo Sauce:

    In a small saucepan, melt butter over medium-low heat. Whisk in flour to form a roux and cook for 1 minute.

    7. Thicken with Milk:

    Slowly whisk in milk and cook until the mixture thickens (about 3–5 minutes).

    8. Add Cheese:

    Remove from heat and stir in Parmesan cheese until melted and smooth.

    9. Combine and Serve:

    Gradually stir the creamy Alfredo sauce into the soup pot. Mix well to combine everything into a rich, cheesy lasagna soup. Serve warm and garnish with extra Parmesan or fresh basil if desired!
