Ingredients:
½ lb ground sausage
1 small onion, chopped
8 oz mushrooms, sliced
2 cloves garlic, minced
4 cups baby spinach
5 cups low-sodium chicken broth
5 lasagna noodles, broken
1 tsp dried oregano
½ tsp dried basil
3 tbsp butter
3 tbsp flour
1 cup milk
1 cup grated Parmesan cheese
Instructions:
In a large saucepan, brown the ground sausage over medium heat. Add onion and mushrooms, and cook for 5–6 minutes until softened.
Stir in garlic and spinach, and cook for 1 minute.
Pour in chicken broth, and simmer for 5 minutes.
Add broken lasagna noodles, oregano, and basil. Bring to a gentle boil and cook for 10–12 minutes until the noodles are tender.
In a separate skillet, melt butter over medium-low heat. Whisk in flour, cooking for 1 minute until bubbling.
Gradually whisk in milk until smooth and thickened (about 3–5 minutes).
Turn off heat and whisk in Parmesan cheese until creamy. Slowly add this Alfredo mixture into the soup, whisking constantly.
Stir and serve hot topped with extra cheese if desired!
