Ingredients:
½ lb ground turkey or chicken
8 oz mushrooms, sliced
1 small onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
8 oz lasagna noodles, broken into pieces
1 cup heavy cream
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1 tsp Italian seasoning
Salt & pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
In a large pot over medium heat, add ground turkey or chicken. Break it apart with a spoon and cook until browned, about 5–6 minutes.
Stir in chopped onion and sliced mushrooms. Sauté for 4–5 minutes until tender and fragrant.
Mix in minced garlic and cook for 1 minute. Pour in vegetable broth, bring to a boil, then add broken lasagna noodles and Italian seasoning.
Cook noodles for 10–12 minutes or until tender, stirring occasionally.
Lower the heat and stir in heavy cream and ricotta until smooth and creamy.
Sprinkle in mozzarella and stir until melted and velvety.
Taste and adjust with salt and pepper. Garnish with fresh parsley before serving hot.
