Cozy Slow Cooker Chicken Noodle Soup

Ingredients:
2 large boneless, skinless chicken breasts (or 4 small ones)
8 cups chicken broth (homemade or low-sodium)
3 medium carrots, sliced
2 celery stalks, sliced
1 small onion, diced
3 cloves garlic, minced
1 tsp dried thyme
1 tsp dried oregano
1 tsp salt (adjust to taste)
½ tsp black pepper
1 bay leaf
1 tsp turmeric (optional – for color & anti-inflammatory benefits)
8 oz chickpea pasta, lentil pasta, or spiralized zucchini noodles for a low-carb/gluten-free option
1 tbsp lemon juice (optional adds brightness)
2 tbsp fresh parsley, chopped
Instructions:
1. Prep Your Slow Cooker:
Add chicken breasts, broth, carrots, celery, onion, garlic, thyme, oregano, salt, pepper, bay leaf, and turmeric (if using) to the slow cooker.
2. Cook:
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is fork-tender.
3. Shred the Chicken:
Remove the chicken, shred it with two forks, and return it to the soup.
4. Add Pasta or Zoodles:
Stir in your pasta or zucchini noodles.
Cover and cook on LOW for another 15–20 minutes, until tender.
5. Finish & Serve:
Remove the bay leaf. Stir in lemon juice and fresh parsley for a refreshing touch.
