    The Cowboy Meatloaf and Potato Casserole is a hearty, all-in-one dish that combines savory ground beef meatloaf with thinly sliced potatoes and melted cheddar cheese.     Cowboy Meatloaf and Potato Casserole Recipe

    Ingredients:
    – 1 pound ground beef
    – 1 onion, finely chopped
    – 2 cloves garlic, minced
    – 1 cup breadcrumbs
    – 1/4 cup ketchup
    – 2 tablespoons Worcestershire sauce
    – 1 teaspoon dried thyme
    – Salt and pepper to taste
    – 4 large potatoes, peeled and thinly sliced
    – 1 cup shredded cheddar cheese
    – Chopped fresh parsley for garnish (optional)

    Instructions:

    1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.

    2. Mix the Meatloaf: In a large bowl, combine the ground beef, finely chopped onion, minced garlic, breadcrumbs, ketchup, Worcestershire sauce, dried thyme, salt, and pepper. Mix until all ingredients are well incorporated.

    3. Shape and Arrange: Transfer the meat mixture to the prepared baking dish, forming a loaf in the center. Arrange the thinly sliced potatoes around the meatloaf, overlapping them slightly. Season the potatoes with additional salt and pepper.

    4. Bake Covered: Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. Then, remove the foil.

    5. Add Cheese: Sprinkle the shredded cheddar cheese over the meatloaf and potatoes. Return the dish to the oven and bake uncovered for an additional 15 minutes, or until the cheese is bubbly and the meatloaf is thoroughly cooked.

    6. Garnish and Serve: Optionally, garnish with chopped fresh parsley before serving.
