    Country French Garlic Soup Recipe – A Classic Comforting Dish with Bold Flavors

    This Country French Garlic Soup is a rustic and heartwarming dish packed with aromatic garlic, savory broth, and a creamy, rich texture. Perfect for chilly nights, this traditional French soup pairs beautifully with crusty artisan bread for an authentic and satisfying meal.

     Ingredients:

    • 2 whole heads of garlic, peeled
    • 1 tablespoon olive oil
    • 1 onion, finely chopped
    • 2 tablespoons butter
    • 6 cups chicken or vegetable broth
    • 2 sprigs fresh thyme
    • 2 bay leaves
    • Salt and pepper, to taste
    • 4 egg yolks
    • 1/2 cup grated Parmesan cheese
    • Crusty bread, for serving
    • Fresh parsley, chopped (optional for garnish)

     Instructions:

    1. Sauté Aromatics: Heat olive oil and butter in a large pot over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
    2. Infuse Garlic Flavor: Add the garlic cloves and sauté for 2-3 minutes, being careful not to burn them.
    3. Simmer the Broth: Pour in the chicken or vegetable broth, then add thyme and bay leaves. Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes until the garlic becomes tender and fragrant.
    4. Season & Strain: Remove the thyme and bay leaves. Season with salt and pepper to taste.
    5. Temper Egg Yolks: In a separate bowl, whisk together the egg yolks and Parmesan cheese. Slowly add a ladleful of hot soup to the egg mixture while whisking continuously.
    6. Thicken the Soup: Gradually return the tempered egg mixture to the pot, stirring constantly. Simmer for another 5 minutes until the soup thickens slightly.
    7. Serve & Enjoy: Ladle the soup into bowls, garnish with fresh parsley, and serve hot with slices of crusty bread for the ultimate French countryside meal.
