    Coconut Lime Grilled Tuna with Fresh Mango Salsa

    Bring the taste of the tropics to your table with this easy, healthy, and protein-packed Coconut Lime Grilled Tuna with Mango Salsa.     Ingredients:

    For the Tuna Marinade:
    1 lb (450 g) tuna steaks, about 1 inch thick
    2 tbsp light coconut milk (just the liquid)
    1 tbsp fresh lime juice
    1 tsp freshly grated ginger (or 1/2 tsp ground ginger)
    1/4 tsp salt
    1/8 tsp black pepper
    1 tbsp olive oil or coconut oil for grilling
    For the Mango Salsa:
    1 ripe mango, peeled and finely diced
    1/4 cup red bell pepper, finely diced
    1/4 cup red onion, finely diced
    1 tbsp fresh cilantro, chopped (optional)
    1 tsp fresh lime juice
    Pinch of salt

    Instructions:

    In a shallow dish, whisk together coconut milk, lime juice, grated ginger, salt, and pepper. Place the tuna steaks in the marinade, coating each side. Let them sit for 15-20 minutes at room temperature. Tuna only needs a short marination to absorb tropical flavors.

    In a medium bowl, gently combine mango, red bell pepper, red onion, cilantro, lime juice, and salt. Taste and adjust seasoning if needed. Set aside for later.

    Heat your grill or grill pan over medium-high heat. If using a pan, add olive oil or coconut oil to prevent sticking and add flavor.

    Place tuna steaks on the hot grill. Cook for 3-4 minutes per side for medium-rare, or longer if preferred. Tuna is best served slightly pink in the center for optimal texture and taste.

    Plate the grilled tuna and top generously with fresh mango salsa. Pair with a side of quinoa, brown rice, or a fresh salad for a complete tropical meal.
