Ingredients (Serves 2–3)

Coconut Lemon Herb Chicken

2 boneless, skinless chicken breasts, cut into bite-sized pieces

Zest & juice of 1 fresh lime

1 clove garlic, minced

1 tbsp olive oil

1 tsp dried oregano

Salt & black pepper to taste

 

Coconut Lemon Alfredo Sauce

2 tbsp unsalted butter

1 clove garlic, minced

½ cup full-fat coconut milk

½ cup heavy cream

¼ cup grated Parmesan cheese

Zest of ½ lime

1 tsp chopped fresh cilantro (optional)

Salt & black pepper to taste

 

Garlic-Roasted Potatoes or Pasta Option

2 medium Yukon Gold potatoes, diced (or 8 oz pasta, cooked al dente)

1 tbsp olive oil

1 clove garlic, minced

1 tsp dried oregano

2 tbsp grated Parmesan cheese

Salt & black pepper to taste

Instructions:

Marinate & Cook the Chicken
