Classic Southern Biscuits & Sausage Gravy

Ingredients:
For the Homemade Biscuits:
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon baking soda
1 teaspoon salt
½ cup cold butter, cubed
1 cup cold buttermilk
For the Creamy Sausage Gravy:
1 lb breakfast sausage
¼ cup all-purpose flour
3 cups whole milk
½ teaspoon salt
1 teaspoon black pepper (or more to taste)
Directions:
Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together flour, baking powder, baking soda, and salt.
Cut in cold butter until the mixture resembles coarse crumbs.
Gently stir in buttermilk just until combined do not overmix.
Drop biscuit dough onto the baking sheet and bake for 12–15 minutes, until golden and fluffy.
While biscuits bake, cook sausage in a skillet over medium heat, breaking it up until browned.
Sprinkle flour over the sausage and stir well. Cook for 1–2 minutes.
Slowly pour in milk, stirring constantly to create a smooth gravy.
Season with salt and black pepper.
Simmer until thick, creamy, and rich.
Split warm biscuits and spoon sausage gravy generously over the top. Serve hot.
