Ingredients:
3 lbs orange sweet potatoes or yams
4 sticks salted butter
2 cups dark brown sugar, firmly packed
1 pinch salt
½ teaspoon vanilla extract
Directions:
Scrub the yams thoroughly and cut into 2-inch thick slices (do not peel yet). Place them in a large pot, cover with cold water, and bring to a boil over medium-high heat. Simmer for about 15 minutes, or until fork-tender. Drain and allow to cool slightly.
Once cool enough to handle, peel the yams and place them evenly in a 13×9 baking dish.
In a saucepan over medium-high heat, melt the butter. Stir in the dark brown sugar and let the mixture boil for 5 minutes until thick and glossy. Remove from heat, then stir in the salt and vanilla.
