    Classic Meatloaf with Creamy Mashed Potatoes and Cheesy Topping Recipe

     

    This Classic Meatloaf with Mashed Potatoes and Cheesy Topping is the ultimate comfort food. Juicy and flavorful meatloaf is paired with creamy, buttery mashed potatoes, then topped with gooey melted cheddar cheese for the perfect finishing touch. Easy to make and packed with flavor, it’s an ideal family dinner or crowd-pleaser. The combination of savory spices, smooth potatoes, and cheesy goodness will leave everyone wanting seconds. Try this timeless recipe for a satisfying meal that’s sure to impress!

    Ingredients:

    For the Meatloaf

    2 lbs ground beef (85% lean)

    1 cup breadcrumbs

    1/2 cup milk

    1 medium onion, chopped

    2 garlic cloves, minced

    2 large eggs

    1 tbsp Worcestershire sauce

    1/2 tsp salt

    1/2 tsp pepper

    1 tsp dried thyme

    1/2 cup ketchup

    2 tbsp brown sugar

    For the Mashed Potatoes

    2 lbs potatoes, peeled and chopped

    1/2 cup milk

    1/4 cup unsalted butter

    Salt and pepper to taste

    For the Topping

    1 1/2 cups shredded cheddar cheese

    Fresh parsley, chopped (for garnish)

    Directions:

    1. Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking oil or spray.

    2. Soak the Breadcrumbs

    Combine breadcrumbs and milk in a small bowl. Let sit for 5 minutes to soften.

    3. Prepare the Meatloaf

    In a large mixing bowl, combine the ground beef, soaked breadcrumbs, onion, garlic, eggs, Worcestershire sauce, salt, pepper, and dried thyme. Mix until fully combined. Shape the mixture into a loaf in the prepared baking dish.

    4. Add the Topping

    In a separate bowl, mix ketchup and brown sugar. Spread this mixture evenly over the top of the meatloaf.

    5. Bake

    Place the meatloaf in the oven and bake for 50–60 minutes or until the internal temperature reaches 160°F (71°C).

    6. Prepare the Mashed Potatoes

    While the meatloaf is baking, place the potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil. Cook for 15–20 minutes or until the potatoes are fork-tender. Drain and return to the pot. Add milk, butter, salt, and pepper, then mash until smooth and creamy.

    7. Assemble and Broil

    Once the meatloaf is baked, spread the mashed potatoes evenly on top. Sprinkle with shredded cheddar cheese. Place the dish under the broiler for 3–5 minutes, or until the cheese is melted and bubbly.

    8. Garnish and Serve

    Let the meatloaf rest for 10 minutes before slicing. Garnish with freshly chopped parsley and serve warm.
