    Classic Chicken and Rice Soup

    Chicken and Rice Soup is the ultimate comfort food recipe warm, nourishing, and incredibly soothing. Made with tender chicken, wholesome vegetables, fluffy rice, and a flavorful homemade broth, this easy chicken soup recipe is perfect for cold days, flu season, or anytime you crave a cozy, homemade meal.     Ingredients:

    Protein & Broth
    1 tablespoon olive oil
    1 lb chicken breast or thighs, cooked and shredded
    8 cups chicken broth (low sodium recommended)
    Vegetables & Aromatics
    1 large onion, chopped
    4 carrots, chopped
    3 celery stalks, chopped
    3–4 cloves garlic, minced
    Rice & Seasonings
    ½ cup long-grain rice (or brown rice)
    1 teaspoon dried thyme
    1 teaspoon dried rosemary
    1 bay leaf
    Salt and black pepper, to taste
    ¼ cup fresh parsley, chopped

    Directions:

    Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5–7 minutes until softened and fragrant.

    Stir in garlic, thyme, and rosemary. Cook for 1 minute until aromatic.

    Pour in chicken broth and add the bay leaf. Bring to a boil, then reduce to a gentle simmer.

    Add rice, cover, and simmer for 15–20 minutes (longer if using brown rice) until tender. Remove bay leaf.

    Stir in shredded chicken and simmer for 5 minutes. Season with salt and pepper. Add fresh parsley just before serving.
