Perfect as a comfort food side dish or a holiday potato casserole, this recipe is both easy and satisfying!

    Ingredients:

4 cups thinly sliced russet or Yukon gold potatoes

    2 cups shredded cheddar cheese

    2 cups whole milk

    1/4 cup butter

    1/4 cup all-purpose flour

    1/2 teaspoon salt

    1/4 teaspoon black pepper

    1/4 teaspoon garlic powder

    Directions:

    1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch casserole baking dish.

    2. In a medium saucepan, melt butter over medium heat. Stir in flour, salt, pepper, and garlic powder until it forms a smooth roux.

    3. Slowly whisk in the milk and cook, stirring constantly, until the sauce thickens. Add 1 cup of cheddar cheese and stir until melted and creamy.

    4. Layer half of the sliced potatoes in the baking dish. Pour half of the cheese sauce evenly over the potatoes.

    5. Repeat with the remaining potato slices and cheese sauce.

    6. Sprinkle the top with the remaining 1 cup of shredded cheese.

    7. Cover with foil and bake for 45 minutes. Then remove the foil and bake for an additional 30 minutes until the potatoes are fork-tender and the top is bubbly and golden brown.
