    Classic Butterscotch Pie Recipe

     

    This Homemade Butterscotch Pie is a rich, silky, and nostalgic dessert made with brown sugar, creamy milk, and a hint of vanilla. Perfect for holidays, Sunday dinners, or whenever you crave a slice of old-fashioned comfort. The buttery filling melts in your mouth a true retro dessert favorite that never goes out of style!

    Ingredients:

    1 cup packed light brown sugar
    4 tablespoons cornstarch
    ½ teaspoon salt
    2 cups milk
    2 egg yolks, beaten
    1 tablespoon butter
    1 teaspoon vanilla extract
    1 (9-inch) baked pie crust

    Directions:

    Make the Filling: In the top of a double boiler, whisk together brown sugar, cornstarch, salt, and milk. Cook over medium heat, stirring constantly, until the mixture begins to thicken (about 20 minutes).
    Add Eggs: Gradually whisk in the beaten egg yolks and continue to cook until the filling becomes thick and smooth.
    Preheat Oven: While the filling cooks, preheat your oven to 400°F (200°C).
    Finish the Filling: Remove from heat, then stir in the butter and vanilla extract for a rich, glossy texture.
    Assemble and Bake: Pour the butterscotch filling into the baked pie crust. Bake for about 5 minutes, or until the top is lightly browned.
    Cool & Serve: Let it cool completely before slicing. Serve chilled or at room temperature.
