    Classic Beef Liver and Onions Recipe (Rich & Savory)

    This classic beef liver and onions recipe is a timeless comfort food , yet still delivers deep, savory flavor.
    Tender pan-fried beef liver is lightly coated in seasoned flour to mellow its strong taste, then cooked with buttery caramelized onions and finished with a rich beef stock pan sauce.
    This old-fashioned dish is nutritious, budget-friendly, and perfect for a hearty homestyle meal.

    Ingredients

    1 lb beef liver, sliced into
    ½-inch pieces
    ¼ cup all-purpose flour
    ½ teaspoon salt
    ⅛ teaspoon black pepper
    ¼–½ cup butter (divided)
    Oil, as needed
    2 cups thinly sliced onions
    1–2 tablespoons fresh minced sage
    ½ cup beef stock
    1 tablespoon fresh Italian parsley, minced (for garnish)

    Instructions

    1. In a large resealable bag, combine the flour, salt, and black pepper.

    2. Add the sliced beef liver and gently shake until evenly coated.

    This helps reduce bitterness and improves browning.
    3. Heat 3 tablespoons of butter with a small amount of oil in a large skillet over medium-high heat.

    4. Add the sliced onions and sauté until soft, tender, and lightly caramelized.
    Season with a pinch of salt and pepper, then transfer to a plate and set aside.

    5. Add the remaining butter and a dash of oil to the same skillet.

    6. Cook the liver slices for about 5 minutes, turning once, until lightly browned on the outside and tender inside.
    7. Return the onions to the skillet and warm together with the liver.
    Transfer to a serving plate.

    8. Pour the beef stock into the skillet to deglaze, scraping up the flavorful browned bits.

    Simmer until slightly reduced into a savory pan sauce.
    9. Spoon the sauce over the liver and onions, garnish with fresh parsley, and serve immediately.
