    Chunky Chicken and Vegetable Stew

    This Chunky Chicken and Vegetable Stew is a hearty, nourishing one-pot recipe packed with tender chicken thighs and colorful vegetables simmered in a flavorful herb-infused broth. Perfect for chilly evenings, family dinners, or meal prep, this homemade chicken stew delivers comforting flavor while staying light, wholesome, and satisfying.
    Made with simple pantry ingredients, this healthy chicken and vegetable stew is naturally rich in protein, fiber, and vitamins making it an ideal choice for anyone looking for an easy, balanced comfort food recipe.

    Ingredients:

    2 tablespoons olive oil
    1 lb (450 g) boneless, skinless chicken thighs, cut into chunks
    1 medium onion, diced
    2 cloves garlic, minced
    2 carrots, peeled and sliced
    2 potatoes, peeled and diced
    1 cup celery, chopped
    1 cup green beans, chopped
    1 zucchini, diced
    4 cups chicken broth
    1 cup water
    1 teaspoon dried thyme
    1 teaspoon dried rosemary
    Salt and black pepper, to taste
    2 tablespoons fresh parsley, chopped

    Instructions:

    Heat olive oil in a large pot over medium heat. Add the chicken chunks and cook until golden brown on all sides, about 5–7 minutes. Remove and set aside.
    In the same pot, sauté the onion and garlic until soft and fragrant, about 3 minutes.
    Add carrots, potatoes, celery, green beans, and zucchini. Stir to combine.
    Pour in chicken broth and water, then season with thyme, rosemary, salt, and pepper. Bring to a boil.
    Reduce heat to low, cover, and simmer for 30–35 minutes, until vegetables are tender.
    Return the chicken to the pot and cook for an additional 5 minutes to heat through.
    Taste and adjust seasoning as needed.
    Garnish with fresh parsley and serve warm.
