Ingredients:

For the Chocolate Domes
200g dark chocolate

For the Homemade Hazelnut Praline
100g hazelnuts
100g granulated sugar

For the Mascarpone Mousse
250g mascarpone
100ml heavy cream
50g powdered sugar
1 tsp vanilla extract

Instructions:

Melt and temper the chocolate:
Finely chop the chocolate.
Melt two-thirds over a double boiler to about 45°C (113°F).
Remove from heat and add the remaining chocolate until smooth and cooled to 31°C (88°F).

Shape the domes:
Brush the inside of half-sphere silicone molds with chocolate.
Let set, then apply a second coat for strength.
Refrigerate until firm.

Caramelize the hazelnuts:
Roast hazelnuts at 180°C (350°F) for 10 minutes and remove skins.
Melt sugar in a saucepan until it becomes golden caramel.
Add hazelnuts and coat well.
Pour onto parchment paper and cool completely.

Make the praline paste:
Break into chunks and process in a food processor until smooth and glossy.

Base mixture:
Whisk mascarpone, powdered sugar, and vanilla until smooth.

Whipped cream:
Whip the heavy cream into stiff peaks and fold gently into the mascarpone mixture.

Add a layer of hazelnut praline inside the chocolate domes.

Add the mousse:
Spoon mascarpone mousse on top until filled.

Seal & chill:
Add a thin layer of melted chocolate if sealing is needed.
Refrigerate for at least 2 hours to set.
