Chinese Chicken with Mushrooms & Vegetables
This Chinese Chicken with Mushrooms recipe is a quick and flavorful stir-fry perfect for busy weeknights. Tender chicken strips are cooked with fresh mushrooms, bell peppers, and broccoli, then tossed in a savory garlic-ginger soy sauce that’s better than takeout! Ingredients:
2 tbsp vegetable oil
1 lb boneless, skinless chicken breasts, sliced into thin strips
1 cup mushrooms, sliced (shiitake or button)
1 bell pepper, sliced (any color)
1 cup broccoli florets
3 cloves garlic, minced
1 tbsp fresh ginger, minced
¼ cup soy sauce
2 tbsp oyster sauce
1 tbsp cornstarch
¼ cup chicken broth
1 tsp sesame oil
Salt & pepper to taste
Steamed rice or noodles for serving
Instructions:
Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken strips and stir-fry for 5–7 minutes until golden and cooked through. Remove and set aside.
In the same pan, add mushrooms, bell pepper, and broccoli. Cook for 3–4 minutes until tender-crisp.
Stir in garlic and ginger, cooking for 1 minute to release their fragrance.
In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, chicken broth, and sesame oil.
Return chicken to the skillet. Pour in the sauce and stir to coat evenly. Cook for 2–3 minutes until the sauce thickens.
Season with salt and pepper to taste. Serve hot over steamed rice or noodles.
