Chicken Tortellini Soup

This Chicken Tortellini Soup is the ultimate comfort food. Made in the slow cooker with tender shredded chicken, cheesy tortellini, fresh spinach, and a rich tomato broth, it’s a hearty and cozy dinner the whole family will love.

Ingredients:

1 tbsp olive oil
1 ½ lbs boneless, skinless chicken breasts (or thighs for richer flavor)
1 small onion, diced
2 cloves garlic, minced
1 large carrot, diced
2 ribs celery, diced
1 (14.5 oz) can diced tomatoes, undrained
4 cups chicken broth
20 oz cheese tortellini (refrigerated or frozen, thawed)
1 tsp dried oregano
1 tsp dried basil
½ tsp red pepper flakes (optional)
Salt and pepper, to taste
2 cups fresh spinach, roughly chopped
Freshly grated Parmesan cheese, for garnish

Directions:

Sauté the vegetables In a skillet, heat olive oil and cook onion, garlic, carrot, and celery for 5 minutes until softened.
Add to crockpot Transfer veggies to the slow cooker. Place chicken on top.
Add liquids Stir in diced tomatoes and chicken broth.
Season Mix in oregano, basil, red pepper flakes, salt, and pepper.
Cook the soup Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until chicken is tender.
Shred chicken & add pasta Remove chicken, shred, and return to crockpot. Stir in cheese tortellini and cook for 30 minutes until pasta is tender.
Finish with spinach Add spinach and let it wilt.
Serve & garnish Ladle into bowls and sprinkle with Parmesan cheese.
