    Chicken Enchilada Soup Recipe

    Warm up with this creamy Chicken Enchilada Soup made with shredded chicken, black beans, corn, and a cheesy, flavorful broth. This easy one-pot soup is packed with Mexican flavors and ready in just 30 minutes perfect for busy weeknights or cozy dinners!

    Ingredients:

    2 cups cooked, shredded chicken (rotisserie chicken works great)
    4 cups chicken broth
    1 can (15 oz) black beans, drained and rinsed
    1 can (15 oz) corn, drained
    1 can (10 oz) enchilada sauce (red or green)
    1 cup shredded cheddar cheese
    1 cup sour cream
    1 small onion, chopped
    2 cloves garlic, minced
    1 tsp chili powder
    1 tsp ground cumin
    Salt and black pepper, to taste
    Tortilla chips & fresh cilantro, for garnish (optional)

    Directions:

    Sauté Aromatics In a large pot, heat a little oil over medium heat. Add the chopped onion and garlic. Cook for 2–3 minutes until softened.

    Build the Base Stir in chicken broth, enchilada sauce, black beans, corn, chili powder, cumin, salt, and pepper.

    Bring to a simmer and cook for 10 minutes, stirring occasionally.

    Add Chicken Stir in shredded chicken and cook for another 5 minutes until heated through.

    Make it Creamy Remove from heat and stir in sour cream and shredded cheddar cheese until melted and creamy.

    Serve & Garnish Ladle into bowls, top with crunchy tortilla chips and fresh cilantro, and enjoy!
