Ingredients:
For the Cherry Bars:
1 ½ cups unsalted butter, softened
3 cups granulated sugar
1 ½ teaspoons salt
5 large eggs
1 ½ teaspoons vanilla extract
1 ½ teaspoons almond extract
5 ½ cups all-purpose flour
1 ½ teaspoons baking powder
2 cans (21 oz each) cherry pie filling
For the Sweet Glaze:
1 cup powdered sugar (confectioners’ sugar)
3 tablespoons milk
Instructions:
- Preheat your oven to 350°F (175°C). Line a 12×17-inch jelly roll pan with aluminum foil and spray with nonstick baking spray.
- In a large mixing bowl or stand mixer, cream the butter and sugar together for 1–2 minutes until light and fluffy.
- Add the salt, eggs, vanilla, and almond extract, mixing until smooth.
- Stir in the flour and baking powder until just combined.
- Reserve 1 ¾ cups of the dough and press the remaining dough evenly into the prepared baking pan.
- Spread the cherry pie filling over the dough layer. Drop small spoonfuls of the reserved dough over the cherry layer.
- Bake for 50–60 minutes, or until the top is golden brown and the center is set.
- Cool completely on a wire rack.
- Mix together the powdered sugar and milk until smooth, then drizzle over the cooled bars.
- Cut into 35 squares.
