    The Cherry Bomb Chocolate Explosion Cake is an irresistible dessert that combines rich, moist chocolate cake with a luscious cherry filling and a decadent chocolate ganache. Perfect for chocolate and cherry lovers, this cake delivers a burst of flavor in every bite. The ganache topping adds a glossy, luxurious finish that makes it perfect for special occasions. It’s easy to make yet impressive, with a balance of sweet cherries and bold chocolate flavors. Whether for a celebration or an indulgent treat, this cake will wow your guests and satisfy any sweet tooth!

    Ingredients:

    For the Chocolate Cake:

    1 3/4 cups all-purpose flour

    1 3/4 cups granulated sugar

    3/4 cup unsweetened cocoa powder

    1 1/2 teaspoons baking powder

    1 1/2 teaspoons baking soda

    1 teaspoon salt

    2 large eggs

    1 cup whole milk

    1/2 cup vegetable oil

    2 teaspoons vanilla extract

    1 cup boiling water

    For the Cherry Filling:

    2 cups fresh or frozen cherries (pitted and chopped)

    1/2 cup granulated sugar

    1 tablespoon cornstarch

    1 tablespoon lemon juice

    For the Chocolate Ganache:

    1 cup heavy cream

    8 ounces semi-sweet chocolate (chopped)

    1 tablespoon unsalted butter

    Directions:

    1. Preheat Oven & Prep Cake Pans:
    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to ensure easy release.

    2. Prepare the Chocolate Cake Batter:
    In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk well.
    Add eggs, milk, oil, and vanilla extract to the dry mixture. Beat with an electric mixer for 2 minutes until smooth. Gradually stir in boiling water the batter will become thin.

    3. Bake the Cake Layers:
    Divide the batter evenly between the two prepared pans. Bake for 30-35 minutes, or until a toothpick comes out clean from the center. Allow the cakes to cool in their pans for 10 minutes before transferring to wire racks to cool completely.

    4. Make the Cherry Filling:
    In a saucepan, combine the chopped cherries, sugar, cornstarch, and lemon juice. Cook over medium heat, stirring frequently, until the mixture thickens (about 5-7 minutes). Let it cool.

    5. Create the Chocolate Ganache:
    In a saucepan, heat heavy cream until just simmering. Pour it over the chopped chocolate in a bowl. Let it sit for a minute, then stir until smooth. Stir in butter until the ganache is glossy.

    6. Assemble the Cake:
    Once the cake layers are completely cool, place one layer on a serving plate. Spread the cherry filling evenly over the top. Add the second cake layer. Pour the rich chocolate ganache over the top, letting it drip down the sides for that beautiful “explosion” look. Garnish with extra cherries for a finishing touch!

    7. Slice & Serve:
