Ingredients:

2 medium zucchini, grated and squeezed dry

150g shredded mozzarella cheese

1 large carrot, grated

2 large eggs

150g all-purpose flour

1 sachet (10g) baking powder

100ml milk

Salt and pepper, to taste

 

Instructions:

1. Grate the zucchini and carrot, then squeeze out as much moisture as possible using a clean towel or cheesecloth.

2. In a large mixing bowl, combine the grated vegetables with the eggs and milk.

3. Add mozzarella, flour, baking powder, salt, and pepper. Stir well to form a thick batter.

4. Preheat your waffle maker and lightly grease it if needed.

5. Pour portions of the batter into the waffle iron and cook until the waffles are crispy and golden brown.

6. Continue until all the batter is used. Serve warm and enjoy these savory, cheesy waffles!
