Ingredients (6 servings):
1 (28 oz) can crushed tomatoes
1 (15 oz) can diced tomatoes
4 cups vegetable broth or chicken broth
1 onion, diced
2 cloves garlic, minced
1 teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
1 cup frozen cheese tortellini
1 cup heavy cream
1 tablespoon olive oil
4 slices bread (for toast bites)
1 cup shredded cheddar cheese
Directions:
1. In a slow cooker, combine crushed tomatoes, diced tomatoes, broth, onion, garlic, basil, oregano, salt, and pepper. Stir well.
2. Cover and cook on low for 6 hours or high for 3 hours.
3. About 30 minutes before serving, stir in the frozen cheese tortellini. Cook until tender.
4. Meanwhile, heat olive oil in a skillet over medium heat. Toast bread slices until golden brown, 2–3 minutes per side.
5. Top each slice with shredded cheddar cheese and melt under the broiler (or in skillet) until bubbly and golden.
