Cheesy Spinach Stuffed Baked Potatoes

Ingredients:
4 medium russet potatoes
1 cup spinach, chopped
1 cup shredded cheese (cheddar or mozzarella)
2 tbsp olive oil
Salt and pepper to taste
1/4 tsp garlic powder (optional)
Instructions:
1. Preheat & Prep: Preheat oven to 400°F (200°C). Pierce the potatoes with a fork, then rub them with olive oil, salt, and pepper.
2. Bake: Place the potatoes on a baking sheet and bake for 45–60 minutes or until tender.
3. Sauté Spinach: While the potatoes are baking, heat a pan over medium heat. Sauté the spinach until wilted, about 2–3 minutes.
4. Stuff & Top: Slice each potato down the center and fluff the insides with a fork. Stuff with sautéed spinach and top with shredded cheese.
5. Melt & Serve: Return to the oven for 5–7 minutes until the cheese melts. Serve hot and enjoy!
