This creamy, cheesy scalloped potato dish is the ultimate comfort food! Perfect for holidays, family dinners, or any night when you’re craving something indulgent and satisfying.
Ingredients:
2 pounds yellow potatoes
1 (10.5-ounce) can condensed cream of mushroom soup (or chicken or celery soup)
1 cup milk
½ teaspoon garlic powder
Black pepper, to taste
1 small onion, thinly sliced
2 cups shredded sharp cheddar cheese
Instructions:
1. Preheat oven to 375°F (190°C).
2. Prepare Potatoes: Rinse and slice the potatoes into ¼-inch thick rounds (keep the skin on for extra flavor).
3. Boil: Cook the potato slices in boiling water for about 5 minutes. Add the sliced onions during the last minute. Drain well.
4. Mix Sauce: In a bowl, combine the soup, milk, garlic powder, and black pepper. Heat in the microwave until warm.
5. Layer: Lightly grease a 2-quart casserole dish or a 9×9-inch baking pan. Spread a thin layer of the soup mixture on the bottom. Layer half the potatoes, pour half the soup mixture over them, and sprinkle with half the cheese. Repeat the layers, finishing with a generous layer of cheese on top.
6. Bake: Bake uncovered for 45-55 minutes or until bubbling and golden brown on top.
7. Serve & Enjoy: Let it cool slightly before serving.
Pro Tip: For extra richness, mix in a bit of sour cream or top with crispy bacon before baking!
