    A comforting Italian-style pasta dish made with tender cheese ravioli tossed in a velvety Parmesan cream sauce, earthy mushrooms, fresh spinach, and tangy sun-dried tomatoes. It’s a fast, flavorful, and nutritious meal that feels gourmet with minimal effort.

    Ingredients:

    Pasta
    12 oz (340 g) cheese ravioli
    Salt for pasta water
    Vegetables
    2 tbsp olive oil
    8 oz (225 g) mushrooms, sliced
    2 cups fresh spinach
    ½ cup sun-dried tomatoes, sliced
    2 garlic cloves, minced
    Salt & pepper to taste
    Sauce
    1 cup heavy cream
    ½ cup grated Parmesan cheese
    ¼ tsp crushed red pepper flakes (optional)
    Salt & pepper to taste
    Optional Garnish
    Fresh basil leaves
    Extra grated Parmesan

    Directions:

    Cook cheese ravioli in salted boiling water according to package instructions.
    Drain and reserve ½ cup pasta water.

    Heat olive oil in a large skillet over medium heat.
    Add sliced mushrooms; sauté 5–6 minutes until golden.
    Add garlic, spinach, and sun-dried tomatoes; cook 2–3 minutes until spinach wilts.
    Season with salt and pepper.

    Stir in heavy cream and Parmesan cheese.
    Add red pepper flakes if desired.
    Simmer 2–3 minutes until slightly thickened.

    Add the cooked ravioli to the skillet.
    Toss gently to coat in the sauce.
    Add a splash of pasta water if the sauce needs loosening.

    Plate warm and garnish with fresh basil and extra Parmesan.
