    Cheesy Potato & Spinach Quiche (No Crust)

    This Cheesy Potato & Spinach Quiche (No Crust) is the perfect crustless quiche recipe for breakfast, brunch, or a light vegetarian dinner. Made with tender potatoes, fresh spinach, eggs, and melted cheese, this healthy spinach quiche is flavorful, gluten-free, and easy to make.

    Ingredients:

    2 cups frozen spinach, thawed & drained
    2 medium potatoes, grated or thinly sliced
    4 large eggs
    1/2 cup heavy cream (or milk for a lighter option)
    1/2 cup cheese (mozzarella, cheddar, or feta)
    1 tbsp butter or olive oil (for greasing)
    Salt & pepper, to taste

    Directions:

    Preheat oven to 375°F (190°C).
    Lightly grease a baking dish with butter or oil.
    Spread grated potato as the base.
    In a bowl, whisk together eggs, cream, spinach, cheese, salt, and pepper.
    Pour the egg mixture over the potatoes.
    Bake for 35–40 minutes, until the quiche is set and golden.
    Cool for 10 minutes before slicing your spinach and potato quiche.
