    Cheesy Pan-Fried Zucchini Rounds

    Cheesy Pan-Fried Zucchini Rounds:

    Ingredients:
    – 2 medium zucchinis, sliced into rounds
    – 150g of grated cheese (mozzarella or cheddar work well)
    – 300g of all-purpose flour
    – 2 eggs
    – Salt and pepper, to taste
    – Oil for frying (vegetable or canola)

    Preparation:
    1. Prepare the Batter:
    – In a large mixing bowl, lightly beat the eggs.
    – Mix in the grated cheese until well combined.
    – Season with salt and pepper.
    – Gradually add the flour, stirring until the batter is smooth and thick enough to coat the back of a spoon. Adjust the consistency with a splash of water or milk if needed.

    2. Prepare the Zucchini:
    – Wash the zucchinis and slice them into rounds about 1/4 inch thick.
    – Pat the zucchini slices dry with paper towels to remove excess moisture.

    3. Heat the Oil:
    – Pour enough oil into a frying pan to coat the bottom and heat over medium heat.

    4. Cook the Zucchini:
    – Dip each zucchini round into the batter, ensuring both sides are well-coated.
    – Carefully place the coated zucchini rounds in the hot oil.
    – Fry for 2-3 minutes on each side until golden brown and crispy. Work in batches to avoid overcrowding the pan.

    5. Drain and Serve:
    – Transfer the fried zucchini rounds to a plate lined with paper towels to drain excess oil.
    – Serve hot and enjoy them warm. They pair well with marinara sauce, ranch dressing, or a simple yogurt dip.
