Looking for an easy weeknight dinner that’s bursting with bold Tex-Mex flavors? This Mexican Taco Lasagna combines seasoned ground beef, cheesy nacho sauce, soft tortillas, and spicy RoTel tomatoes for the ultimate family-friendly comfort food! Perfect for taco night or a fun twist on traditional lasagna.

 

Ingredients:

1 pound ground beef

1 packet taco seasoning mix

1/4 cup water

1 can RoTel diced tomatoes with green chiles, drained

1 can nacho cheese soup

1/4 cup sour cream

1 cup shredded cheddar cheese

12 soft 8-inch flour tortillas

Optional toppings: guacamole, chopped cilantro, sour cream

 

Instructions:

1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish with non-stick spray.

2. In a skillet, brown the ground beef over medium heat, breaking it up as it cooks. Drain excess grease.

3. Stir in taco seasoning and water. Cook for 2 minutes until well combined.

4. In a bowl, mix the RoTel tomatoes, nacho cheese soup, and sour cream. Add the cooked beef and stir well.

5. Layer 3 tortillas in the bottom of the dish. Top with 1/3 of the beef mixture.

6. Repeat the layers, ending with tortillas. Sprinkle shredded cheddar cheese evenly over the top.

7. Bake uncovered for 20 minutes, or until hot and bubbly.

8. Let cool slightly and top with your favorite garnishes: creamy guacamole, fresh cilantro, and a dollop of sour cream!
