Cheesy Mexican Dorito Casserole Bake
A crowd-pleasing, easy-to-make Tex-Mex comfort food dinner made with Nacho Doritos, taco-seasoned meat, gooey cheese, and creamy goodness!
Ingredients for Cheesy Mexican Dorito Casserole:
1 bag Nacho Cheese Doritos, crushed
2 cups shredded cooked chicken or seasoned ground beef
2 cups Mexican blend shredded cheese (or cheddar)
1 can (10.75 oz) cream of chicken soup
1 can Rotel diced tomatoes with green chilies, undrained
1/2 cup sour cream
1/2 cup milk
1/2 packet taco seasoning mix
Instructions:
1. Preheat oven to 350°F (175°C).
2. In a large mixing bowl, combine shredded chicken (or ground beef), cream of chicken soup, Rotel, sour cream, milk, taco seasoning, and 1 cup of shredded cheese. Mix until creamy.
3. In a greased 9×13 baking dish, layer half of the crushed Doritos.
4. Spoon the meat mixture over the chips and spread evenly.
5. Top with remaining Doritos and the rest of the cheese.
6. Bake for 25–30 minutes, or until the cheese is melted and bubbly.
7. Garnish with chopped cilantro, green onions, or a dollop of sour cream, if desired.
