Cheesy Mexican Dorito Casserole
This Cheesy Mexican Dorito Casserole is the ultimate comfort food! Packed with layers of crunchy Nacho Doritos, creamy taco-seasoned chicken (or beef), and gooey melted cheese, it’s a crowd-pleasing Tex-Mex casserole that’s perfect for family dinners, potlucks, or game day gatherings.
Ingredients:
1 bag Nacho Cheese Doritos, lightly crushed
2 cups shredded rotisserie chicken or cooked ground beef
2 cups shredded cheddar or Mexican blend cheese (plus more for topping)
1 can (10.75 oz) cream of chicken soup
1 can Rotel diced tomatoes with green chilies, undrained
1/2 cup sour cream
1/2 cup milk
1/2 packet taco seasoning (or to taste)
Instructions:
1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
2. Prepare the filling: In a large bowl, mix the cooked chicken or beef with cream of chicken soup, Rotel, sour cream, milk, and taco seasoning until fully combined.
3. Layer the casserole: Spread half of the crushed Doritos in the bottom of the dish. Pour the meat mixture over the Doritos, then sprinkle with 1 cup of cheese.
4. Top and bake: Add the remaining crushed Doritos and top with the rest of the shredded cheese. Bake for 25–30 minutes, or until bubbly and golden.
5. Serve hot, optionally garnished with sliced green onions, diced tomatoes, or avocado.
